Going strong!

So I've found another benefit to veganism! My liver enzymes have always been very high because I have Lupus, my last check was 1 month ago and my numbers were 364 and 165 (normal is 35-45). I had them checked on Monday and they were down to 55 ans 32!!! Because they've come down I got the okay to try to get pregnant again!

Here's a few more recipes that I've tried out that I liked!


Addictive Bean Curry

Ingredients (use vegan versions):

1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 large onion, chopped
1 tablespoon grated/chopped gingerroot
2 cloves garlic, chopped
1 large (28 oz) can diced tomatoes
2 cans (19 oz each) kidney beans (or mixed beans or other beans)
1 teaspoon (or more!) curry paste
salt to taste

Directions:

Heat oil in large pot over medium heat and stir fry the mustard and cumin seeds until they pop. Add onion, ginger, and garlic and stir fry until lightly colored. Add tomatoes with juice, beans (drained and rinsed), and 1 tsp curry paste (to start!). Simmer for about 20 minutes or until thick and saucy. Keep adding curry paste to taste during the cooking. Salt to taste. Pataks Madras curry paste is my favorite but other type work well too. This is easy, healthy, and really addictive! Serve with rice, pita, toast, chapattis, nan, straight from the pot....

These are s good for a snack when you're craving chips or similar snacks:

Spicy Chickpea Snack

Ingredients (use vegan versions):

2-4 tablespoons cooking oil
1 tablespoon Cajun spice
1 tablespoon chili powder
1 teaspoon salt and pepper
1 (15 ounce) can chickpeas, drained and rinsed

Directions:

1. Preheat oven to 400 degrees F. Pour oil into baking pan, add spices, mix well.

2. Add chickpeas and mix until well coated.

3. Place in oven for 15-20 minutes, or until crunchy. Stir once half way. Enjoy cold or hot.

I like to eat these instead of chips or other junk while I watch a movie.

Serves: 4, Preparation time: 3 minutes

  1. Sounds awesome! I am looking at Lacto ovo vegatarianism. I am getting some books at the library to research and gather some edible recipes...lol before I make any changes though. It's a lifestyle change. God Bless!
